MY STORY

I am passionate about creating real pizza with character. I've been an avid home baker of pizza and bread for over 2 decades but this story really began in the summer of 2014 when I finally put into action a plan I've been hatching for many years - to build my own wood-fired pizza oven.  Armed with a little knowledge, an understanding wife and with lots of hard graft over many wet weekends, I crafted out of local clay, sharp sand and straw from nearby fields my bespoke 'Pizza Kiln'.

 

The cooking hearth is Italian marble laid on a foundation of fire bricks, able to cope with temperatures well over 500 degrees celcius - more than twice as hot as your domestic oven can go. Which means a pizza can bake in as little as 90 seconds instead of the 7 mins in your oven.

 

But I soon discovered that this was only the beginning of the adventure, the start of a journey to create mouthwatering pizzas I could be proud of.  Like many 'foodies', I don't think I'll ever finish learning new ways to improve on

 

 

 

 

recipes and techniques. And more than a year later, after many hours of patient refinement and encouragement of friends and family, I'm delighted to be firing the kiln up to sell for collection freshly baked pizza made to favourite recipes.

 

With thanks to many willing testers and understanding neighbours, Pizza Kiln will open approximately once a month - a 'pop up pizza' event - to serve take away pizza to the public near where I live. More on my approach here.

 

All pizzas are £10 with 10% of profits donated to local charities.
